Beef and Broccoli Fried Rice (High Protein)

A savory beef and broccoli fried rice with an unflavored protein powder blended into the sauce for an extra protein boost, without altering the classic savory flavor.

 

Ingredients (4 servings)

 

  • 1 pounds lb lean beef sirloin or flank steak, thinly sliced
  • 3 cups cups cooked rice, cold or day-old
  • 2 cups cups broccoli florets
  • 2 large eggs, beaten
  • 3 cloves garlic, minced
  • 1 tablespoons tbsp fresh ginger, minced
  • 3 green onions, sliced
  • 0.3 cups cup low-sodium soy sauce
  • 1 tablespoons tbsp oyster sauce
  • 1 scoop Unflavored Whey Isolate
  • 2 tablespoons tbsp water, to blend protein powder
  • 2 tablespoons tbsp sesame oil, divided
  • 1 tablespoons tbsp neutral cooking oil
  • 1 teaspoons tsp toasted sesame seeds, for garnish

 

 

Preparation

 

1 Prepare the protein-boosted sauce: In a small bowl, whisk 1 scoop unflavored or savory protein powder with 2 tablespoons tbsp water, to blend protein powder until smooth, then whisk in 0.3 cups cup low-sodium soy sauce and 1 tablespoons tbsp oyster sauce. Set the sauce aside.

 

2 Sear the beef: Heat 1 tablespoons tbsp neutral cooking oil in a large skillet or wok over high heat. Add 1 pounds lb lean beef sirloin or flank steak, thinly sliced in a single layer and sear until browned, then remove and set aside.

 

3 Stir-fry the broccoli: In the same pan, add 2 cups cups broccoli florets and stir-fry until bright green and just tender.

 

4 Scramble the eggs: Push the broccoli to one side, pour in 2 large eggs, beaten, and scramble until just set, then mix everything together.

 

5 Add aromatics: Add 3 cloves garlic, minced and 1 tablespoons tbsp fresh ginger, minced, stirring until fragrant.

 

6 Add the rice: Add 3 cups cups cooked rice, cold or day-old, breaking up any clumps, and stir-fry until heated through and starting to crisp slightly.

 

7 Combine and sauce: Return the beef to the pan, pour in the prepared sauce, and toss everything together until evenly coated.

 

8 Finish and garnish: Remove from heat, drizzle with 2 tablespoons tbsp sesame oil, divided, and stir in 3 green onions, sliced. Garnish with 1 teaspoons tsp toasted sesame seeds, for garnish before serving.

 

 

Notes

 

Unflavored or savory-style protein powder works best here so it blends into the sauce without adding sweetness. Whisking it into a small amount of water first prevents clumping when it hits the hot pan. Day-old rice fries up much better than freshly cooked rice, since the extra moisture in fresh rice makes it clump and steam instead of crisping.
