Apple Pie Protein Overnight Oats

A make-ahead breakfast combining rolled oats, diced apple, warm cinnamon spice, and vanilla protein powder for a creamy, apple pie-flavored overnight oats bowl.

Ingredients (1 serving)

  • 0.5 cups cup old-fashioned rolled oats
  • 1 scoop High Whey Vanilla Cake
  • 0.8 cups cup milk (dairy or unsweetened almond)
  • 0.3 cups cup plain Greek yogurt
  • 0.5 small apple, peeled and finely diced
  • 0.5 teaspoons tsp ground cinnamon
  • 0.3 teaspoons tsp vanilla extract
  • 1 tablespoons tbsp honey or maple syrup
  • 1 tablespoons tbsp chopped walnuts or pecans, for topping
  • 1 pinch pinch salt

Preparation

1 Blend the protein powder: In a jar or container, whisk together 1 scoop vanilla protein powder and 0.8 cups cup milk (dairy or unsweetened almond) until fully smooth with no clumps.

2 Combine the base: Add 0.5 cups cup old-fashioned rolled oats, 0.3 cups cup plain Greek yogurt, 0.5 teaspoons tsp ground cinnamon, 0.3 teaspoons tsp vanilla extract, 1 tablespoons tbsp honey or maple syrup, and 1 pinch pinch salt. Stir until well combined.

3 Add the apple: Fold in 0.5 small apple, peeled and finely diced, reserving a few pieces for topping if desired.

4 Chill overnight: Cover and refrigerate to let the oats soften and thicken.

5 Stir and top: In the morning, give the oats a good stir, loosening with a splash of milk if too thick, then top with 1 tablespoons tbsp chopped walnuts or pecans, for topping and any reserved apple.

Notes

Nutrition will vary depending on your specific brand of protein powder and milk. For extra apple pie flavor, sauté the diced apple briefly with a touch of cinnamon before adding, then let it cool before mixing in. These oats keep well in the fridge for up to 3 days, so a batch can cover several mornings.
