A tangy lemon curd-style filling boosted with protein powder, baked over a simple oat-almond crust for a lighter take on classic lemon bars.

 

Ingredients (9 servings)

 

  • 1 cups cup old-fashioned rolled oats
  • 0.5 cups cup almond flour
  • 3 tablespoons tbsp melted butter
  • 2 tablespoons tbsp honey or maple syrup, for crust
  • 1 cups cup plain nonfat Greek yogurt
  • 2 scoops High Whey Vanilla Cake
  • 0.5 cups cup fresh lemon juice
  • 2 lemons, zested
  • 3 large eggs
  • 0.3 cups cup honey or maple syrup, for filling
  • 1 tablespoons tbsp cornstarch
  • 0.3 teaspoons tsp salt

 

 

Preparation

 

Preheat and prep pan: Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.

Make the crust: In a bowl, combine 1 cups cup old-fashioned rolled oats, 0.5 cups cup almond flour, 3 tablespoons tbsp melted butter, and 2 tablespoons tbsp honey or maple syrup, for crust. Mix until a crumbly dough forms, then press evenly into the bottom of the prepared pan.

Pre-bake the crust: Bake the crust until lightly golden at the edges.

Prepare the lemon filling: While the crust bakes, whisk together 1 cups cup plain nonfat Greek yogurt, 2 scoops vanilla or unflavored protein powder, 0.5 cups cup fresh lemon juice, 2 lemons, zested, 3 large eggs, 0.3 cups cup honey or maple syrup, for filling, 1 tablespoons tbsp cornstarch, and 0.3 teaspoons tsp salt in a bowl until completely smooth.

Pour the filling: Pour the lemon filling over the warm crust and spread evenly.

Bake the bars: Bake until the center is set and only slightly jiggly.

Cool and chill: Let the bars cool to room temperature, then refrigerate until fully chilled and firm before slicing into 9 squares.

Nutrition will vary depending on your specific brands of protein powder and sweetener. Let the bars cool fully, then chill before slicing for clean, firm edges. A light dusting of powdered sweetener on top makes for a nice finishing touch just before serving.
