Ingredients

 

  • 6 large eggs
  • 2 tablespoons unflavored protein powder or High Whey Vanilla 
  • 1/4 cup milk (or dairy-free alternative)
  • 1/2 cup diced vegetables (e.g., bell peppers, spinach, mushrooms)
  • 1/4 cup shredded cheese (optional, or dairy-free cheese for intolerance)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and black pepper to taste
  • Cooking spray or oil for greasing

 

Instructions

 

  1. Preheat the Oven
    • Preheat your oven to 375°F (190°C) and lightly grease a muffin tin with cooking spray or oil.
  2. Prepare the Filling
    • In a medium bowl, whisk together the eggs, protein powder, and milk until smooth.
    • Add the diced vegetables, shredded cheese (if using), garlic powder, onion powder, salt, and pepper. Mix until well combined.
  3. Fill the Muffin Tin
    • Pour the egg mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
  4. Bake
    • Bake for 18–20 minutes, or until the quiches are puffed and set in the center.
  5. Cool and Serve
    • Let the mini quiches cool for a few minutes before removing them from the muffin tin. Serve warm or store in an airtight container in the fridge for up to 4 days.
