Ingredients:

  • 1/2 cup High Whey Vanilla
  • 1 cup almond flour
  • 1/4 cup powdered sugar (plus extra for rolling)
  • 1/2 cup unsalted butter, softened
  • 1/2 tsp vanilla extract
  • 1/4 tsp almond extract (optional for extra flavor)
  • 1/4 tsp salt
  • 1/2 cup finely chopped pecans or walnuts

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Make the Dough: In a large bowl, beat the softened butter until creamy. Add the almond flour, protein powder, powdered sugar, vanilla extract, almond extract (if using), and salt. Mix until a dough forms. Gently fold in the chopped nuts.
  3. Shape the Cookies: Scoop out tablespoon-sized portions of dough and roll each into a ball. Place the balls on the prepared baking sheet, spacing them about an inch apart.
  4. Bake: Bake for 10-12 minutes, or until the cookies are just set and lightly golden on the bottom. Let them cool on the baking sheet for 5 minutes.
  5. Coat with Powdered Sugar: While the cookies are still warm, roll each one in powdered sugar until fully coated. Let them cool completely, then roll in powdered sugar again for a snowy finish.
