Blueberry Protein Pie Cups
Ingredients (4–6 cups)
For the crust:
- 1 cup rolled oats (blended into flour)
- 2 tbsp almond butter or peanut butter
- 2 tbsp maple syrup or honey
- 1 tbsp coconut oil (melted)
For the blueberry filling:
- 1½ cups blueberries (fresh or frozen)
- 1 cup unsweetened coconut yogurt or Greek-style dairy-free yogurt
- 1 scoop High Whey Vanilla Cake
- 1 tsp vanilla extract
- 1 tbsp lemon juice
Optional toppings:
- Extra blueberries
- Coconut flakes
- Crushed nuts
Preparation
- Make the crust:
Mix oat flour, nut butter, maple syrup and coconut oil. Press into the bottom of silicone muffin cups or small jars. - Prepare the filling:
Blend blueberries, yogurt, protein powder, vanilla and lemon juice until smooth. - Assemble:
Pour blueberry mixture over the crust and smooth the top. - Chill:
Refrigerate for at least 3 hours or freeze for 1 hour until set. - Serve:
Add toppings before serving.
