Pumpkin Spice Protein Muffins Recipe

Ingredients:

• 1 cup pumpkin puree
• 1 scoop High Whey pumpkin spice latte protein powder
• 1/2 cup brown sugar or sweetener of choice
• 1 cup flour (all-purpose or whole wheat)
• 1 tsp baking powder
• 1/2 tsp cinnamon
• 1/4 tsp nutmeg
• Pinch of salt
• 1/2 tsp baking soda
• 1/2 cup milk (dairy or plant-based)
• 1 egg
• 1/4 cup melted butter or oil
• Optional: chopped nuts or raisins for extra texture and flavor

Instructions:

1. Preheat your oven to 350°F (175°C) and spread paper liners in a muffin tin.
2. Whisk pumpkin puree and pumpkin spice latte protein powder in a bowl until smooth.
3. Combine the flour, brown sugar, baking powder, cinnamon, baking soda, nutmeg, and salt in another bowl.
4. Now, take the third bowl, and whisk the milk with egg and melted butter or oil.
5. Combine wet and dry ingredients; mixing well. However, ensure to not overmix.
6. If desired, add chopped nuts or raisins for extra flavor and texture.
7. Fill each muffin cup about two-thirds full, dividing the batter evenly among all the cups. 
8. Bake in the preheated oven for 18-20 minutes. You can check if it’s ready by inserting toothpick into the center of a muffin. Carefully take it out, it’s clean, your muffins are ready!
9. Wait, don’t transfer the muffins to wire rack right after taking them out of the oven, let them cool for a while.
