Ingredients (10–12 bites)

 

For the crust:

  • ¾ cup almond flour
  • 2 tbsp coconut oil, melted
  • 2 tbsp maple syrup or honey

For the cheesecake filling:

  • 1 cup unsweetened coconut yogurt or light cream cheese
  • 1 scoop High Whey Vanilla Cake
  • 1 tsp vanilla extract
  • Zest of ½ lemon

For the blueberry topping:

  • 1 cup blueberries (fresh or frozen)
  • 1 tbsp maple syrup or honey
  • 1 tsp lemon juice

 

 

Preparation

 

  1. Make the crust:
    Mix almond flour, coconut oil, and maple syrup. Press into the bottom of a mini muffin tray lined with silicone or paper liners.
  2. Prepare the filling:
    In a bowl, whisk yogurt (or cream cheese), protein powder, vanilla, and lemon zest until smooth.
  3. Assemble:
    Spoon filling over crusts and smooth the top.
  4. Blueberry topping:
    Simmer blueberries, maple syrup, and lemon juice for 5–7 minutes until slightly thickened. Let cool, then spoon over cheesecake bites.
  5. Chill:
    Refrigerate for at least 2 hours until set.
