Crispy Chicken Caesar Salad

This is a classic Caesar salad with a glow-up. It’s crunchy, creamy, and satisfying enough to be your full meal.

Ingredients

 

For the chicken:

  • 1 large chicken breast (sliced into strips or flattened)
  • Salt and pepper to taste
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tbsp olive oil
  • 1/2 cup bread crumbs (or crushed cornflakes for extra crisp)
  • Optional: grated parmesan to coat lightly

 

For the salad:

  • 3 cups romaine lettuce, chopped
  • 1/4 cup shaved parmesan
  • Croutons (optional, or swap for roasted chickpeas)

 

For the protein Caesar dressing:

  • 2 tbsp Greek yogurt (dairy-free if needed)
  • 1 tbsp mayo
  • 1 tsp Dijon mustard
  • 1 small garlic clove, grated
  • 1 tbsp lemon juice
  • 2 tbsp grated parmesan
  • 1 scoop Unflavored Whey Isolate
  • Splash of water to thin if needed
  • Salt and pepper to taste

 

 

Preparation

 

  1. Prepare the chicken:
    • Season the chicken strips with salt, pepper, garlic powder and paprika.
    • Coat lightly with bread crumbs (and parmesan if using).
    • Heat olive oil in a pan and cook chicken on medium heat until golden and crispy on both sides (about 4–5 minutes per side). Set aside.
  2. Make the protein Caesar dressing:
    • In a bowl, mix Greek yogurt, mayo, mustard, lemon juice, garlic, parmesan and the protein powder.
    • Whisk until smooth. Add a splash of water if the dressing becomes too thick. Season with salt and pepper.
  3. Assemble:
    • Add lettuce to a large bowl. Pour in the dressing and toss until everything is lightly coated.
    • Top with crispy chicken strips, shaved parmesan and croutons or roasted chickpeas.
