Ingredients

 

  • 2 scoops High Whey Protein (Vanilla)
  • 1 cup almond flour
  • 1/2 cup blueberries
  • 2 eggs
  • 1/4 cup honey
  • 1/2 cup unsweetened applesauce
  • Zest of 1 lemon
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp vanilla extract

 

 

Instructions

 

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine the almond flour, protein powder, baking powder, and salt.
  3. In another bowl, whisk together the eggs, honey, applesauce, lemon zest, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Gently fold in the blueberries.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
