This protein-rich quiche is a fantastic way to keep your holiday meals wholesome without sacrificing flavor. It's a perfect centerpiece for health-conscious people who still crave that indulgent holiday experience. 

 

 

Ingredients:

 

  • 1 cup whole wheat pastry flour
  • 4 tablespoons cold unsalted butter, cut into small pieces
  • 1/4 teaspoon salt
  • 2-3 tablespoons ice water
  • 1/2 cup whey protein powder (unflavored or a neutral flavor)
  • 4 large eggs
  • 1 cup low-fat milk
  • 1/2 cup low-fat shredded cheddar cheese 
  • 1/2 cup halved cherry tomatoes
  • 1/4 cup diced red bell pepper
  • 1/2 cup chopped spinach
  • 1/4 cup finely chopped onion
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste

 

 

Instructions:

 

  • Begin by preheating your oven to 375°F (190°C). In a mixing bowl, combine the whole wheat pastry flour and salt. Add the cold butter and use your fingers or a pastry cutter to blend until the mixture resembles coarse crumbs.
  • Sprinkle ice water over the flour mixture, one tablespoon at a time, mixing lightly with a fork until the dough comes together.
  • Shape the dough into a disc, wrap it in plastic wrap, and chill in the refrigerator for at least 30 minutes.
  • Once chilled, roll out the dough on a floured surface and gently press it into a 9-inch pie dish. Trim any excess dough from the edges and prick the crust bottom with a fork.
  • Whisk together the eggs, milk, and whey protein powder in a separate bowl until smooth. Stir in the cheese, tomatoes, spinach, bell pepper, onion, thyme, and garlic powder. Season with salt and pepper.
  • Pour the egg mixture into the prepared crust and smooth the top with a spatula.
  • Bake in the oven for 35-40 minutes or until the quiche is set and the crust is golden brown.
