Ingredients

 

  • Whole wheat flour – 1 1/2 cups (You can also use oat flour)
  • Vanilla – 2 scoops (you can also use vanilla-flavored protein powder
  • Baking powder – 2 tsp full 
  • Baking soda – 1/2 tsp
  • Salt – 1/4 tsp 
  • Greek yogurt – 1/2 cup (any non-dairy yogurt can do)
  • Maple syrup – 1/4 cup (honey is also a great option)
  • Eggs – 2 large 
  • Vanilla extract – 1 tsp 
  • Almond milk – 1/2 cup (any milk of your choice)
  • Coconut oil – 1/3 cup (melted unsalted butter if you don’t like the coconut smell)
  • Fresh Blueberries – 1 cup (frozen ones are just as good if fresh ones aren't available to you)

 

 

Instructions

 

Preheat the Oven – Ready your oven by preheating it to 375°F (190°C). You should lightly grease your muffin tin and add paper liners.

 

Dry Ingredients – Combine the ingredients such as flour, baking powder, baking soda, protein powder, and salt in a large bowl and whisk them together.

 

Wet Ingredients – In a separate standard-sized bowl, combine the Greek yogurt, honey or maple syrup, eggs, vanilla extract, almond or regular milk, and melted coconut oil or butter. Mix until smooth.

 

Combine – Slowly add the wet and dry ingredients, stirring gently until the mix properly and avoid overmixing. Otherwise, the Blueberry Protein Muffins will have lumps in the end.
