Ingredients

  • Bell pepper – 1 red, sliced

  • Olive oil – 2 tbsp

  • Cumin – 1 tsp

For the Dressing

  • Tahini – 3 tbsp 
  • Lemon – 1; properly make the juice
  • Water – 2 tbsp (or more, for desired consistency)
  • Garlic clove – 1, which you should mince it 
  • Salt, to taste

 

 

Instructions

 

Roast Sweet Potatoes and Chickpeas: start the oven and preheat to 400°F (200°C). You should mix the sweet potatoes and chickpeas by throwing them in a bowl with olive oil, cumin, smoked paprika, salt, and pepper in a bowl. Carefully lay them on a baking sheet and ensure they are in a single layer. It takes 25-30 minutes for the primary ingredients to become roasted. You can also stop if the sweet potatoes are tender and the chickpeas are slightly crispy.

 

Prepare the Dressing – Whisk together tahini, lemon juice, salt, minced garlic, water, and in a small bowl. Adjust the consistency by adding more water to your Buddha bowl dressing if needed.
