  • 1 can (15 ounces) black beans, drained and rinsed
  • 1/4 cup plant-based protein powder (your choice of flavor)
  • 2 tablespoons coconut oil (or other plant-based oil)
  • 1/4 cup cocoa powder
  • 1/4 cup maple syrup or agave nectar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • A pinch of salt
  • 1/4 cup dairy-free chocolate chips (optional)

 

 

Instructions:

 

  1. Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper.
  2. In a food processor, combine the drained and rinsed black beans, plant-based protein powder, cocoa powder, maple syrup, coconut oil, vanilla extract, baking powder, and a pinch of salt.
  3. Blend until you achieve a smooth and well-mixed batter, scraping down the sides of the food processor as needed.
  4. If desired, fold dairy-free chocolate chips into the batter for an extra indulgence.
  5. Pour the batter into the prepared baking pan and spread it evenly.
  6. Bake in the preheated oven for 20-25 minutes, or until the brownies are set, and a toothpick inserted right into the center comes out mostly clean with a few moist crumbs.
  7. Remove from the oven and allow the brownies to cool in the pan for 10-15 minutes before taking them out using the parchment paper and cutting them into squares.
