For the Protein-Packed Sauce:

  • 2 tbsp protein powder (unflavored or your choice of flavor)
  • 2 tablespoons soy sauce or tamari
  • 1 tbsp rice vinegar
  • 1 tbsp honey or maple syrup
  • 1/2 tsp minced ginger
  • 1/2 tsp minced garlic

 

For the Stir-Fry:

  • 14 ounces (400g) firm tofu or tempeh, cubed
  • 2 cups mixed vegetables 
  • 2 tbsp vegetable oil
  • Cooked brown rice or quinoa for serving

Protein-Packed Sauce:

  • Whisk together protein powder, soy sauce or tamari, rice vinegar, honey or maple syrup, minced ginger, and minced garlic in a small bowl.
  • Set aside.

 

Stir-Fry:

  • Heat vegetable oil in a large skillet or wok over medium-high heat.
  • Add cubed tempeh or tofu to the skillet and cook until the cubes turn lightly brown on all sides, about 5-7 minutes. Remove from the skillet and set aside.
  • Add a bit more oil, if needed, in the same skillet, and stir-fry the mixed veggies until they are crisp-tender, about 4-5 minutes.
  • Return the cooked tofu or tempeh to the skillet and pour the Protein-Packed Sauce over the ingredients.
  • Stir-fry for 2-3 minutes, allowing the sauce to coat all the ingredients and thicken slightly.
