National Coffee Cake Day

A soft and fluffy chocolate chip coffee cake made with oat flour and protein powder. This healthier version is perfect for brunch, snack time, or enjoying with your morning coffee without the sugar crash.

Ingredients (8–10 slices)

 

For the cake:

  • 1½ cups oat flour (or blended oats)
  • 1 scoop High Whey Vanilla Cake
  • 2 eggs
  • ⅓ cup maple syrup or honey
  • ½ cup almond milk or oat milk
  • ¼ cup coconut oil or olive oil (melted)
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • ½ tsp baking soda
  • Pinch of salt
  • ⅓ cup dark chocolate chips

For the crumble topping:

  • ¼ cup oat flour
  • 1 tbsp coconut oil
  • 1 tbsp maple syrup
  • ½ tsp cinnamon

 

 

Preparation

 

  1. Preheat oven to 350°F (180°C) and line a small baking dish with parchment paper.
  2. In a bowl, whisk eggs, maple syrup, milk, oil, and vanilla.
  3. Add oat flour, protein powder, baking powder, baking soda, and salt. Mix until smooth.
  4. Fold in chocolate chips.
  5. In a separate bowl, mix crumble ingredients until crumbly.
  6. Pour batter into baking dish and sprinkle crumble on top.
  7. Bake for 25–30 minutes, or until a toothpick comes out clean.
  8. Let cool slightly before slicing.
