Creamy and refreshing blueberry protein pie cups made with real blueberries and protein powder. These no-bake, healthy mini desserts are perfect for National Blueberry Pie Day.

Blueberry Protein Pie Cups


 

Ingredients (4–6 cups)

 

For the crust:

  • 1 cup rolled oats (blended into flour)
  • 2 tbsp almond butter or peanut butter
  • 2 tbsp maple syrup or honey
  • 1 tbsp coconut oil (melted)

 

For the blueberry filling:

  • 1½ cups blueberries (fresh or frozen)
  • 1 cup unsweetened coconut yogurt or Greek-style dairy-free yogurt
  • 1 scoop High Whey Vanilla Cake
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice

 

Optional toppings:

  • Extra blueberries
  • Coconut flakes
  • Crushed nuts

 

 

Preparation

 

  1. Make the crust:
    Mix oat flour, nut butter, maple syrup and coconut oil. Press into the bottom of silicone muffin cups or small jars.
  2. Prepare the filling:
    Blend blueberries, yogurt, protein powder, vanilla and lemon juice until smooth.
  3. Assemble:
    Pour blueberry mixture over the crust and smooth the top.
  4. Chill:
    Refrigerate for at least 3 hours or freeze for 1 hour until set.
  5. Serve:
    Add toppings before serving.
