Sweet Potato Protein Brownies

Ingredients

 

  • 1 cup mashed sweet potato (cooked and cooled)
  • 2 scoops High Whey Chocolate Cake
  • 1/2 cup almond flour
  • 2 eggs
  • 1/4 cup cocoa powder
  • 1/4 cup maple syrup or honey
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 cup dark chocolate chips (optional)

 

 

Instructions

 

  1. Preheat the oven to 350°F (175°C) and line a square baking pan with parchment paper.
  2. In a large bowl, mix together the mashed sweet potato, eggs, vanilla extract, and maple syrup.
  3. Add the protein powder, almond flour, cocoa powder, and baking powder to the wet ingredients, and stir until well combined.
  4. Fold in the dark chocolate chips if using.
  5. Pour the batter into the prepared pan and spread it out evenly.
  6. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
