Ingredients:

 

  • 4 large bell peppers, tops cut off and seeds removed
  • 1 cup cooked quinoa
  • 1/2 lb (225 g) lean ground turkey
  • 1 can (15 oz) black beans, drained and rinsed
  • 1/2 cup corn kernels, fresh or frozen
  • 1/2 cup grated low-fat cheese, plus extra for topping
  • 2 cloves garlic, minced
  • 1/2 cup tomato sauce
  • 1/2 cup diced onion
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish
  • Greek yogurt or sour cream for serving (optional)

 

 

Instructions:

 

  • Preheat your oven to 375°F (190°C). Lightly grease a baking dish or line it with parchment paper.
  • In a skillet over medium heat, cook the ground turkey with the diced onion and minced garlic until the turkey is browned and the onions are translucent. Season with cumin, chili powder, smoked paprika, salt, and pepper.
  • Combine the cooked turkey mixture with the cooked quinoa, black beans, corn, and half of the grated cheese in a large bowl. Pour in the tomato sauce and stir until all the ingredients are well mixed.
  • Neatly stuff each bell pepper with the turkey and quinoa mixture, pressing lightly to pack the filling.
  • Place the stuffed peppers in the prepared baking dish, and sprinkle the tops with the remaining grated cheese.
  • Cover the dish with aluminum foil and bake for 25-30 minutes or until the peppers are tender.
  • Remove the foil and bake for 5-10 minutes or until the cheese is melted and slightly golden.
  • Allow the peppers to cool for a few minutes before serving. Garnish with fresh cilantro or parsley and, if desired, a dollop of Greek yogurt or sour cream.
