Reinvent a classic Italian dish into a protein-packed meal. This eggplant recipe is flavorful and aligns with your nutritional needs.

Ingredients

  • Eggplants – 2 large and sliced
  • Marinara sauce – 2 cups
  • Mozzarella – 1 cup low-fat and shredded
  • Breadcrumbs – 1/2 cup
  • Parmesan – 1/4 cup grated
  • Egg – 1 beaten to mix easily
  • Garlic powder – 1 teaspoon
  • Seasoning – Italian, one teaspoon

Instructions

  • The first step is preheating the oven, which we recommend for this dish to set up at 375°F (190°C).
  • Dip eggplant slices in the egg you beat before, then coat with a mixture of breadcrumbs, garlic powder, and Italian seasoning.
  • Now, carefully place them evenly on an oiled baking sheet on the tray. When the preheating is done, place the tray in the oven and keep it there for 20 minutes. After 10 minutes, flip them to even bake.
  • Layer baked eggplant, marinara sauce, and mozzarella in a baking dish. Repeat layers.
  • The final ingredient and the secret topping is the grated Parmesan. Now, bake it again, but for 25-30 minutes.
  • Take the tray out until the cheese is bubbly and golden.
