Ingredients (1–2 servings)

 

For the chicken

  • 1 chicken breast, boneless & skinless
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • ½ tsp garlic powder
  • ½ tsp paprika
  • Salt and black pepper, to taste
  • Juice of ½ lemon

 

For the bowl

  • 1 cup cooked quinoa or brown rice
  • ½ cup cherry tomatoes, halved
  • ½ cucumber, diced
  • ¼ red onion, thinly sliced
  • 2 tbsp olives, sliced
  • Fresh parsley or dill (optional)

 

High-Protein Greek-Style Sauce

  • ¼ cup dairy-free Greek-style yogurt
  • 1 scoop High Whey Vanilla Cake 
  • 1 tbsp lemon juice
  • 1 tsp olive oil
  • ½ tsp garlic powder
  • Salt to taste
  • Water or unsweetened almond milk (to thin, as needed)

 

 

Preparation

  1. Cook the chicken
    Season the chicken with olive oil, oregano, garlic powder, paprika, salt, pepper, and lemon juice.
    Grill or pan-cook over medium heat for 5–6 minutes per side, until fully cooked. Let rest, then slice.
  2. Prepare the base
    Cook quinoa or brown rice according to package instructions. Fluff and set aside.
  3. Make the protein sauce
    In a bowl, whisk the dairy-free yogurt with protein powder, lemon juice, olive oil, garlic powder, and salt.
    Add small amounts of water or almond milk until smooth and creamy.
  4. Assemble the bowl
    Add the grain base to a bowl. Top with sliced chicken, tomatoes, cucumber, red onion, olives, and herbs.
  5. Finish & serve
