Protein Coconut Lime Popsicles

Creamy coconut milk and fresh lime juice blended with vanilla protein powder, then frozen into refreshing popsicles — each scoop of protein powder contributes about 25g of protein.

 

Ingredients (6 servings)

 

  • 2 cups full-fat coconut milk (canned)
  • 2 scoops High Whey Vanilla Cake
  • 0.3 cups fresh lime juice
  • 3 limes, zested
  • 3 tablespoons honey or maple syrup
  • 0.3 cups unsweetened shredded coconut
  • 0.3 cups water
  • 1 pinch pinch salt

 

 

Preparation

 

  1. Blend the base: In a blender, combine 2 cups full-fat coconut milk (canned), 2 scoops vanilla protein powder (25g protein per scoop), 0.3 cups fresh lime juice, 3 limes, zested, 3 tablespoons honey or maple syrup, 0.3 cups water, and 1 pinch pinch salt. Blend until completely smooth, about 30-45 seconds.
  2. Add shredded coconut: Stir in 0.3 cups unsweetened shredded coconut by hand for a bit of texture, or blend briefly if you prefer a smoother consistency.
  3. Taste and adjust: Give the mixture a taste and adjust sweetness or lime juice to your preference before pouring.
  4. Fill the molds: Pour the mixture evenly into popsicle molds, leaving a little room at the top for expansion. Insert sticks.
  5. Freeze until firm: Freeze the popsicles until completely solid.
  6. Unmold and serve: Run the outside of the molds under warm water for a few seconds to loosen, then gently pull the popsicles free.
