Pumpkin Seed Protein Granola

 

 

Ingredients (8 servings)

 

  • 2 cups rolled oats
  • ½ cup raw pumpkin seeds (pepitas)
  • ¼ cup chopped almonds or walnuts (optional)
  • 1 scoop High Whey Vanilla Cake
  • 2 tbsp chia seeds or flaxseeds
  • ¼ tsp salt
  • 1 tsp cinnamon

Wet ingredients:

  • ¼ cup maple syrup or honey
  • 2 tbsp coconut oil, melted
  • 1 tsp vanilla extract
  • 2–3 tbsp almond milk (if needed for mixing)

 

 

Preparation

 

  1. Preheat oven to 325°F (165°C) and line a baking sheet with parchment paper.
  2. Mix dry ingredients:
    In a large bowl, combine oats, pumpkin seeds, nuts, protein powder, chia seeds, salt, and cinnamon.
  3. Add wet ingredients:
    Stir in maple syrup, melted coconut oil, and vanilla extract. Mix until everything is evenly coated. Add almond milk if mixture feels too dry.
