Chocolate Chip Protein Cookies
Ingredients (10–12 cookies)
- 1 cup oat flour (or blended oats)
- 1 scoop High Whey Vanilla Cake
- ¼ cup almond butter or peanut butter
- ¼ cup maple syrup or honey
- 1 egg
- 2 tbsp almond milk
- ½ tsp baking soda
- ½ tsp vanilla extract
- Pinch of salt
- ⅓ cup dark chocolate chips
Preparation
- Preheat oven to 350°F (180°C) and line a baking tray with parchment paper.
- In a bowl, mix almond butter, maple syrup, egg, almond milk, and vanilla until smooth.
- Add oat flour, protein powder, baking soda, and salt. Stir until a dough forms.
- Fold in chocolate chips.
- Scoop dough onto baking tray and gently flatten.
- Bake for 10–12 minutes, until edges are set but centers are soft.
- Let cool on the tray for 5 minutes before transferring.
