Ingredients (4–6 servings)
- 4 cups brioche bread, cut into small cubes
- 4 eggs
- 4 egg whites
- 1 scoop unflavored protein powder
- 1 cup almond milk or oat milk
- 1 cup spinach, chopped
- ½ cup mushrooms, sliced
- ½ cup bell pepper, diced
- ¼ cup light shredded cheese or vegan cheese (optional)
- 1 tbsp olive oil
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp garlic powder
Preparation
- Preheat oven to 375°F (190°C) and lightly grease a baking dish.
- Spread brioche cubes evenly in the dish.
- Sauté mushrooms and bell pepper in olive oil for 3–4 minutes. Add spinach and cook until wilted.
