Brioche Breakfast Casserole 

 

 

Ingredients (4–6 servings)

 

  • 4 cups brioche bread, cut into small cubes
  • 4 eggs
  • 4 egg whites
  • 1 scoop unflavored protein powder
  • 1 cup almond milk or oat milk
  • 1 cup spinach, chopped
  • ½ cup mushrooms, sliced
  • ½ cup bell pepper, diced
  • ¼ cup light shredded cheese or vegan cheese (optional)
  • 1 tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder

 

 

Preparation

 

 

  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  2. Spread brioche cubes evenly in the dish.
  3. Sauté mushrooms and bell pepper in olive oil for 3–4 minutes. Add spinach and cook until wilted.
  4. In a bowl, whisk eggs, egg whites, protein powder, milk, salt, pepper, and garlic powder until smooth.
  5. Layer cooked veggies over the bread and pour egg mixture evenly on top.
  6. Sprinkle cheese if using.
  7. Bake for 30–35 minutes, until set and lightly golden.
  8. Let rest for 5 minutes before slicing.
